Brown Sugar Spice Cake with Cream Cheese Buttercream

Naked Cake, Spice Cake, Brown Sugar Spice Cake, Cream Cheese Buttercream, Cake with Flowers, Cake Decorating, Fall Dessert RecipesYou would think that after years of baking cakes, decorating cakes, photographing cakes, thinking about cakes, and looking at the cakes everyone else is making, that I'd be tired of cake.  But, I'm not.  I honestly love the whole creative process of baking, decorating, and styling a photo shoot, especially when it's cake.  And it's been a matter of personal pride for me the last couple of years to listen to feedback on my recipes and work hard to make them even better.


Believe it or not, one of the most popular recipes on my blog is my plain Vanilla Cake.  It's such a simple, reliable and adaptable recipe that tastes great, and I think that's what people love about it so much.  That recipe was actually the starting point for developing today's cake, with brown sugar instead of white and a whole heap of spices.  This spice cake was so incredibly fragrant while baking, filling the whole house with the warm scent of cinnamon, nutmeg, cloves and ginger.

In addition to the quartet of spices you might expect to find in a spice cake, I also added a little espresso powder.  Not so much that you really taste the coffee, but it's such a nice complement to the spices and the brown sugar.  And with both buttermilk and oil in the batter, you can be guaranteed of a really moist cake with a beautiful, tender crumb.

To showcase the rich color of the cake, I opted for a naked design, with a minimal amount of cream cheese buttercream.  The cake is so good on its own without loads of frosting, but if you double the buttercream recipe and frost the cake all over, that would be pretty great, too.  When it comes to cream cheese buttercream, there's really no such thing as too much frosting.

It's nearly fall!  Are you as excited about that as I am?  To celebrate our fifth anniversary, my husband and I are taking a trip this month - sort of a belated honeymoon - to New England.  We've never been, and I can't wait to see all the beautiful foliage, drive through the countryside, relax, eat, sleep... and just be the two of us again for a few days.  I love being a mom, but sometimes I really miss being a girlfriend and a wife, and I can hardly wait for our little getaway.  At the same time, though, I'm incredibly sad at the thought of leaving our boys for the first time with their grandparents, and I miss them already, before our trip has even begun.

Brown Sugar Spice Cake

Cake.
  • 2 3/4 cups cake flour
  • 1 3/4 teaspoons baking powder
  • 1 1/4 teaspoons baking soda
  • 1 teaspoon coarse Kosher salt
  • 2 teaspoons cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground cloves
  • 1 tablespoon espresso powder or instant coffee powder
  • 1 3/4 cups light brown sugar, lightly packed
  • 1 3/4 cups full-fat buttermilk, room temperature
  • 3 large eggs, room temperature
  • 3/4 cup vegetable oil
  • 2 teaspoons vanilla
Buttercream.
  • 4 ounces cream cheese, room temperature
  • 4 ounces (1 stick or 1/2 cup) unsalted butter, room temperature
  • 2 1/2 cups powdered sugar
  • 1 tablespoon meringue powder
  • 1/8 teaspoon coarse Kosher salt
  • 1 teaspoons vanilla bean paste
Note:  This recipe makes a conservative amount of buttercream.  If you'd like enough buttercream to cover the cake and/or fill more layers, simply double the buttercream recipe.

Preheat the oven to 350.  Spray two (or up to four) 8-inch cake pans with non-stick spray.

In a large bowl, sift together the flour, baking powder, baking soda, salt, spices and espresso powder.  In another bowl, whisk together the brown sugar, buttermilk, eggs, oil and vanilla.  Add the wet ingredients to the dry and whisk until well combined, about 1 minute.  Divide the batter between the pans.

Bake until a cake tester or sharp knife comes out clean, or with moist crumbs clinging to it, about 25-28 minutes.  Set the pans on a wire rack, cover loosely with a clean kitchen towel, and cool completely before frosting.

For the buttercream, combine the cream cheese and butter in the bowl of your stand mixer fitted with the whisk attachment; beat until combined, about 1 minute.  Add the powdered sugar, meringue powder, salt and vanilla, and mix on low to combine, then beat on medium speed until light and fluffy, scraping the bowl down occasionally, about 4-5 minutes.

Remove the cooled cakes from the cake pans.  Place one cake on top of a cake board or cake pedestal.  Frost with 1/2 of the buttercream, leaving the sides naked.  Place the second cake layer and frost the top.
