Dark Chocolate Pudding

Chocolate Pudding, Chocolate Desserts, Chocolate Custard, Desserts in JarsWe are, or rather, my husband is, in the process of building a pergola on our back patio.  We have a huge maple tree that shades the grass for the majority of the day, but the patio ends up unusable except for the early morning and evening, as it sits in full southern sun and becomes unbearably hot during the day.

The pergola is nearly done, and just needs some additional cross beams on the top, and it's looking so beautiful already...
Once it's finished, I have an outdoor rug to put under our sectional, and curtains to hang from two sides to shield the sun that comes in at an angle.  It's going to be the perfect place to relax with our boys so we can spend more time outside, and I think the first party we'll have out there will be Phoenix's second birthday in October.  How is it possible I am going to have a two-year-old and a six-month-old?

All this hot weather calls for quick and easy desserts, like this chocolate pudding.  One day last week was World Chocolate Day (it amazes me how so many food bloggers manage to keep up with all these food "holidays" and bake something for each one).  Just at the suggestion of chocolate, though, I impulsively decided to cook a pot of chocolate pudding for dessert that night.

This is a rich pudding, or custard, if you prefer, with a generous amount of egg yolks and bittersweet chocolate, and we ate tiny servings hot off the stove, topped with freshly whipped cream, and chilled the rest for later, which my toddler loved diving into with his own spoon.

The pudding is thick, creamy and luxurious, and can certainly be used to fill a pre-baked pie crust as well, although I do have a fantastic chocolate cream pie in my recipe archives that is famous with my family, and that isn't quite as rich as this pudding.  It looks extra pretty served in tiny trifle dishes or little 4-oz jars, topped with whipped cream and a crumbled cookie.

Chocolate Pudding
  • 4 egg yolks
  • 1/2 cup granulated sugar
  • 1 tablespoon corn starch
  • 2 tablespoons unsweetened cocoa powder
  • pinch salt
  • 1 cup milk
  • 1/2 cup half 'n' half
  • 6 ounces bittersweet or semisweet chocolate
  • 1 teaspoon vanilla
  • 2 tablespoons unsalted butter
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
 In a saucepan, whisk together the egg yolks and sugar until smooth.  Whisk in the corn starch, cocoa powder, salt, and 1/2 cup of the milk until smooth.  Whisk in the remaining milk and the half 'n' half.  Over medium heat, cook the pudding, whisking constantly, until it begins to thicken, then cook for one additional minute.  Remove from the heat and whisk in the chocolate, vanilla and butter until melted.

Whip the cream and the powdered sugar until soft peaks form.  Serve the pudding warm, or chilled, topped with the whipped cream.

Yields 6 small servings.
