Mini Pink Poppy Cakes

I've always been a girly girl (other than a few years in the 90s when I was into grunge and rarely wore anything other than ratty jeans and my dad's flannel shirts), and as a little girl I loved playing with my Barbies and having pretend tea parties with my dolls, brushing their hair and dressing them.  In my imagination, I served them dainty cups of real tea with doily-lined plates of fancy little cakes and cookies and fruit.

Inside the pretty pink frosting is soft almond poppyseed cake, which continues to be one of my favorite cake recipes in my archives.  It bakes up light, tender and perfectly flavored every time, and while I love it with almond pastry filling and fluffy almond buttercream (I really love almond in cakes and pastries), this time I paired it with strawberry buttercream, which I happened to have leftover in my freezer and needed to use up.

For a fancy flourish, I tinted some of the buttercream a darker shade of pink, almost red, and piped some simple poppy flowers, their centers filled with poppy seeds, of course.  I referred to this tutorial for piping the poppies, and they are an incredibly easy buttercream flower to create.  The author of the tutorial notes that while many people use a rose tip, she used tip #122.  I used a medium-sized curved rose tip, #61, which worked great for me.

Now, as much as I like the look of mini cakes, they are a bit of a pain to frost; being so tiny, it can be tedious spreading the frosting very neatly around the sides and over the top, and piping the frosting on uses quite a bit more.  Not to mention storing them and serving them without ruining the frosting while picking them up is a challenge.  So if you created this look as cupcakes, which are infinitely easier to frost and store, I'm sure they would be just as beautiful.
