Chocolate White Chocolate Sandwich CookiesIt's been more and more autumn-like here, with cold, rainy weather all weekend; we actually turned the pilot light in our fireplace on over the weekend so we could enjoy a fire.  Tomato soup, grilled cheese sandwiches, a warm fire, French toast, cozy pajamas, popcorn, cookies, and my husband and little boy playing and laughing on the living room rug made for the most perfect weekend...


As I was cleaning up my recipe archives the other day, deleting outdated, or just-not-good-enough recipes, I realized I'd never shared a recipe for this classic cookie combination of a dark chocolate cookie with white chocolate chips.  And as I had only to thaw out some frozen buttercream to fill the cookies, they became even more decadent sandwich cookies.

My college campus, although not a place I remember with much fondness, had one redeeming quality - it was right across the street from a little cookie shop.  Just behind the girls' dorms, through a gate, over a bridge to cross the busy street, and a quick little walk down the road, was an unassuming little shop that greeted you with the heavenly scent of freshly baked cookies when you opened the door.

Just for visiting their shop, they would immediately hand you a warm cookie to eat while you looked around.  I remember glass case after glass case filled with dozens of varieties of cookies and fudge, but there was only one cookie that I ever wanted - the chocolate chip sandwich cookie.  Two soft, chewy chocolate chip cookies filled with sugary vanilla frosting.  That was the cookie I always asked for, in exchange for about $1.50 worth of quarters hoarded for laundry nights.  It was a simple but scrumptious cookie, comforting and filling, and felt like coming home on a cold, cozy evening.

Cookies.
  • 1 cup unsalted butter, softened to room temperature
  • 1 cup granulated sugar
  • 1 cup dark brown sugar
  • 1 teaspoon vanilla
  • 2 eggs
  • 2 1/3 cups all-purpose flour
  • 2/3 cup unsweetened cocoa powder
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 2 teaspoons espresso powder
  • 1 1/2 cups white chocolate chips
Filling.
  • 1/2 cup unsalted butter, softened to room temperature
  • 1 cup powdered sugar
  • 1/2 teaspoon vanilla
  • pinch salt
Cookies.
In the bowl of your stand mixer, fitted with the paddle attachment, beat the butter with both sugars on medium speed for several minutes until light and fluffy, scraping the bowl down several times.  Beat in the vanilla and eggs and scrape the bowl down.

In a separate bowl, whisk together the flour, cocoa powder, salt, baking soda and espresso powder.  Gradually add to the butter and sugar, mixing on low to combine.  Batter will be very thick and you may have to use your hands to finish kneading in all the dry ingredients.  Stir in the white chocolate chips.

Refrigerate the dough for an hour.  Preheat the oven to 350 and line a baking sheet with parchment paper.  Use a cookie scoop or spoon to scoop rounded tablespoonfuls of dough onto the parchment paper, spacing the cookies 2 inches apart.  Lightly flatten the balls with your palm.

Bake the cookies for 8 minutes.  Cool on the pan for 2 minutes, then transfer to a wire rack to cool completely.

Yields about 3 dozen cookies.

Filling.
With an electric mixer, beat all the filling ingredients for 4-5 minutes until light and fluffy.  Spread between the cooled cookies.
