Cookies and Creamsicles

I remember that, growing up, I had a friend whose family would never buy cartons of cookies and cream ice cream.  Instead, they would buy vanilla ice cream, and a package of Oreos, break up the cookies and mix them together, convinced it was better that way.

But I disagree.  A crunchy Oreo cookie does nothing for me, and I'll only eat one straight from the package if I have a glass of cold milk to soak it in first until it's nice and soft.  And the same goes for ice cream.  The cookies need time to soak up all that creamy goodness so that they become one with the ice cream, not a too-crunchy afterthought that's tossed on top of vanilla ice cream.










These cookies and creamsicles are everything I could want from cookies and cream ice cream, but they're served up on cute little popsicle sticks in tiny little popsicle portions.

They can be a bit of a pain to get in and out of popsicle molds, and could also be made inside little paper cups, which are then just cut and peeled off.  But I used the molds, since it's what I have on hand, and they are just the right size to enjoy a little bit of ice cream on these warm spring days.  Who else can't believe that it's already June?









Cookies and Creamsicles

  • 8 ounces cream cheese, softened to room temperature
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla
  • 1/4 teaspoon nutmeg
  • 1 1/2 cups heavy whipping cream
  • 1 teaspoon vodka (optional)
  • Oreo cookies (about 18 cookies), roughly chopped
In a bowl, use an electric mixer to beat the cream cheese, powdered sugar and vanilla until smooth.  Add the nutmeg, cream and vodka, and beat until thick, soft peaks form.  Fold in the Oreos.

Scoop the mixture into popsicle molds, banging the mold on the counter to settle the mixture into the bottom of the molds so you can fill them full.  Insert popsicle sticks and freeze until solid, about 4-6 hours.

Yields about 12 creamsicles
