Oatmeal with Caramelized Bourbon BananasOatmeal is one of the few cooked breakfasts I remember eating growing up.  Usually, there was cold cereal or pop tarts, instant oatmeal or cream of wheat, sometimes frozen waffles or scrambled eggs and hot buttered toast and jam, and on special occasions, pancakes or french toast with syrup and fruit.  But maybe once a week or so, on cold winter mornings, my mom would cook oatmeal before we left for school...


I grew up in a house that was heated by a wood stove, and every night before bed, and again early in the morning, my dad would stoke the fire and add more wood so that we'd wake up to the fire burning briskly, warming the living room and kitchen and drawing us out of the cold bedrooms.

Still in our pajamas, we'd gather around the kitchen table, breathing in the steamy aroma of a big pot of oatmeal, full of plump raisins and spiced with cinnamon.  We'd heap spoonfuls of brown sugar in our bowls, pour in cold milk to cool down the hot oatmeal, and fill our bellies with what I still consider to be one of the most comforting, homey breakfasts.

I eat oatmeal a few times a week now, and it's usually a pretty simple affair with the usual cinnamon, raisins and vanilla, with a touch of maple syrup or brown sugar, and a handful of blueberries or whatever fruit we have on hand.  Sometimes I'll add a bit of wheat germ, flax meal and a sprinkling of chia seeds, to increase the healthfulness, although I far prefer it without all that. And I still love to pour cold milk on my oatmeal.

For a luxurious variation of a simple bowl of oats, I created this recipe that's topped with caramelized bourbon bananas, a sauce that's almost like a banana caramel.  With the butter, brown sugar, bourbon and cream, this is not your every day oatmeal.

Oatmeal.
  • 2 cups old-fashioned oats
  • 4 cups water
  • 1/4 cup brown sugar
  • 1 teaspoon vanilla
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 teaspoon nutmeg
  • 1/8 teaspoon cloves
Bananas.
  • 1/4 cup unsalted butter
  • 1/4 cup brown sugar
  • 1/4 teaspoon salt
  • 3 bananas, sliced
  • 1/4 cup heavy cream
  • 2 tablespoons bourbon
For the oatmeal, combine all ingredients in a saucepan.  Bring to a boil over medium heat, then simmer over low heat for 5-7 minutes, stirring occasionally, until the oatmeal is thickened.

For the caramelized bananas, melt the butter in a skillet over medium heat then stir in the brown sugar and salt.  Cook for several minutes, then add the bananas, cream and bourbon.   Continue cooking to thicken the sauce - the bananas will soften and melt somewhat into the sauce to create a banana caramel.

Serve the oatmeal with the bananas, and milk on the side, if you like.
