Lately I've been trying to come up with ways of making treats to enjoy that aren't as sugar and butter-laden as the cakes I love to bake and decorate. Nothing against my beautiful cakes and pies, but they're not an every-day dessert for me.
As I was leaving work one day, my head hurting in the glaring sun (or it may have been from the pressure of the headband I had been wearing all day...), I was daydreaming about milkshakes. Cold, creamy and luscious.
So I got out my blender and made a milkshake. And although this milkshake actually didn't contain any cream or ice cream or candy pieces, it tasted as delicious as it was healthy.
Since unsweetened almond milk is what I've been drinking lately instead of skim milk, it's what I used, but I actually thought the almond milk was a little overpowering for the strawberries. So after trying it again a few days later with coconut milk, my vote goes to the coconut milk for this recipe.
This "milkshake" was nothing more than frozen strawberries and coconut milk, blended together until smooth, and a few drops of extract to enhance the flavor. You could use any extract you like, such as coconut, vanilla, almond or orange extracts. And if it's not sweet enough for your idea of a milkshake, then use the smallest bit of honey, sugar or other sweetener of your choice.
I can't wait to try this with frozen cherries. With something this fresh and natural tasting, it's hard to remember those days so long ago that I actually thought "strawberry quik" tasted good... :)
